Potstickers













Seems I'm always thinking about food, talking about food, or making food. So here I go again.

My ginger chicken potstickers are a family favorite. We had them for lunch today.

FIrst I clean a bunch of scallions and slice them thinly. The white and light green parts go in the bowl for the potsticker filling, the dark green parts get reserved for the dipping sauce. Then I grate some ginger -- a root about 3 inches long -- and add it to the bowl. Alex helped with the grating. Then I mix in about a pound and a half of ground chicken. Lay out the wrappers -- today I only had egg roll wrappers which I cut into 1/4s -- spoon the chicken mixture on and fold and seal. Then I steam them in the bamboo steamer for about 7 minutes. For the sauce I soak some red pepper flakes in sesame oil. Then add the green onion tops and soy sauce.
