Dinner tonight





I had a feeling tonight's dinner was going to be ultra yummy so I snapped some pics before we dug in. I was right about the yummy part!

I marinated the chicken in the juice of a very ripe grapefruit with some soy sauce, grated fresh ginger, and minced fresh garlic. (Note, if you want to make this dish and use breasts instead of thighs/legs, I would also add some oil.) Then Gregg grilled them to perfection. The rice is jasmine rice (I know, I know, it's white...). I started with a little walnut oil in the pan and heated it on high then added some grated ginger and two thinly sliced baby leaks. Then I put in the jasmine rice and water (forgot salt but that was remedied at the table). OMG, it was heavenly. The carrots are just steamed and drizzled with a little honey. The salad is baby spinach and arugula with thyme and oregano -- all from the garden. For dressing I mixed tahini with some soy sauce and aged balsamic and olive oil. I didn't bother putting herbs in it since they were already in the salad.

MMMM, that looks yummy! That's so cool you can shop in your garden! I am envious! I did find a stand alone farmer's market that only has local produce and he's starting an Al la carte CSA type thing. I'm very excited b/c it is only 10 min from home.

That looks awesome.. so that is where the color is from.. grapefruit.. I should fruity marinates.. I LOVE orange chicken.. A healthier variation of that would be awesome..
